1 cup coarsely chopped pecans

1 cup unsalted butter

1 cup granulated sugar

½ teaspoon kosher salt

1 teaspoon vanilla extract

1 cup milk chocolate chips


Instructions

1. Toast the pecans in a dry skillet over medium heat for about 5 minutes until fragrant and slightly darkened. Set aside to cool completely.

2. Line a baking sheet with parchment paper or a silicone baking mat. Sprinkle half of the toasted pecans evenly across the surface.

3. Combine the butter, sugar, and salt in a heavy-bottomed saucepan over medium heat. Stir constantly until the butter melts completely.

4. Cook, stirring often, until the mixture turns amber and reaches 285°F on a candy thermometer (about 8–10 minutes).

5. Remove from heat and stir in the vanilla extract carefully. Quickly fold in the remaining toasted pecans.

6. Pour the hot toffee mixture over the pecans on the baking sheet, spreading into an even ¼-inch layer.

7. Sprinkle the chocolate chips evenly over the hot toffee, let them sit for 2–3 minutes, then spread until glossy.

8. Cool completely at room temperature for 2 hours or refrigerate for 30 minutes. Break into pieces and enjoy!
