- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup sugar
- 16 oz cream cheese, softened
- ¾ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 medium apples, peeled and diced
- ¼ cup brown sugar
- 1 teaspoon lemon juice
- ½ teaspoon ground cinnamon
- ¼ cup caramel sauce
Instructions
- Preheat the oven to 325°F (160°C). Line an 8×8 inch baking dish with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the dish.
- Bake the crust for 8-10 minutes until lightly golden. Let it cool slightly.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar, followed by eggs, vanilla, and cinnamon until creamy.
- Pour the cheesecake filling over the cooled crust.
- In a bowl, toss diced apples with brown sugar, lemon juice, and ground cinnamon. Spread over the cheesecake filling.
- Bake for an additional 20-25 minutes, until the filling is set and edges are golden.
- Cool completely, drizzle caramel sauce on top, then slice into bars.
- Serve chilled or at room temperature.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. You can use different types of apples for a varied taste.
