- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large tortillas
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 onion, diced
- 1 bell pepper, diced
- Salt and pepper to taste
- Fresh herbs (optional for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add diced onion and bell pepper; cook for about 3 minutes until softened.
- Stir in minced garlic and cook for an additional 2 minutes until fragrant.
- Add the shredded chicken to the skillet. Season with salt and pepper. Stir until heated through, about 3 minutes.
- Sprinkle the shredded cheese over the chicken mixture. Stir gently until cheese melts and becomes gooey.
- Lay one tortilla flat, spoon the chicken-cheese mixture into the center, and wrap it tightly.
- Place the wrap back in the skillet, seam side down. Cook for 2-3 minutes per side until golden and crispy.
- Cut each wrap in half and garnish with fresh herbs if desired. Enjoy!
Notes
Store any leftovers in an airtight container in the fridge for up to 3 days. Can substitute tortillas with lettuce leaves for a low-carb option.
