- 8 oz egg noodles (or your preferred noodle)
- 1 lb boneless, skinless chicken breast, sliced
- 2 tablespoons vegetable oil
- 1 cup bell pepper, sliced
- 1 cup carrots, julienned
- 2 cups broccoli florets
- 4 green onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Bring a pot of salted water to a boil. Add egg noodles and cook according to package instructions. Drain and set aside.
- In a large skillet or frying pan, heat vegetable oil over medium-high heat.
- Add sliced chicken breast to the pan. Season with salt and pepper. Cook for about 5-7 minutes until fully cooked and browned. Remove chicken from the pan and set aside.
- In the same pan, add garlic and ginger. Cook for 1-2 minutes until fragrant. Then, add bell pepper, carrots, and broccoli. Sauté for another 5 minutes until veggies are tender yet crisp.
- Return the chicken to the pan. Add the cooked noodles along with soy sauce, oyster sauce, and sesame oil. Toss everything together for about 2-3 minutes until heated through.
- Remove from heat and stir in chopped green onions. Enjoy your delicious Chicken Lo Mein!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop.
