Description

Warm, comforting Chicken Lo Mein with tender chicken and fresh veggies tossed in a savory sauce, perfect for busy weeknights.


Ingredients

  • 8 oz egg noodles (or your preferred noodle)
  • 1 lb boneless, skinless chicken breast, sliced
  • 2 tablespoons vegetable oil
  • 1 cup bell pepper, sliced
  • 1 cup carrots, julienned
  • 2 cups broccoli florets
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil. Add egg noodles and cook according to package instructions. Drain and set aside.
  2. In a large skillet or frying pan, heat vegetable oil over medium-high heat.
  3. Add sliced chicken breast to the pan. Season with salt and pepper. Cook for about 5-7 minutes until fully cooked and browned. Remove chicken from the pan and set aside.
  4. In the same pan, add garlic and ginger. Cook for 1-2 minutes until fragrant. Then, add bell pepper, carrots, and broccoli. Sauté for another 5 minutes until veggies are tender yet crisp.
  5. Return the chicken to the pan. Add the cooked noodles along with soy sauce, oyster sauce, and sesame oil. Toss everything together for about 2-3 minutes until heated through.
  6. Remove from heat and stir in chopped green onions. Enjoy your delicious Chicken Lo Mein!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop.
