Ingredients
½ cup unsalted butter, melted
½ cup brown sugar
¼ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1½ cups grated zucchini (squeezed dry)
¾ cup chocolate chips (semi-sweet or dark)
Optional: ½ cup chopped walnuts or pecans, 1 teaspoon cinnamon
Instructions
1. Preheat the oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
2. Whisk melted butter with both sugars until smooth.
3. Add egg and vanilla; whisk until combined.
4. In another bowl, mix flour, baking soda, salt, and cinnamon.
5. Fold dry ingredients into wet until just combined.
6. Stir in zucchini and chocolate chips.
7. Spread batter evenly in the pan.
8. Bake 25–30 minutes or until edges are golden.
9. Cool completely before slicing into bars.
Notes
Do not overmix — this keeps the bars tender.
Drain zucchini well for best texture.
Swap half the butter for applesauce for a lighter version.
Store airtight up to 3 days or freeze up to 2 months.
