- 1 pound beef bacon (or turkey bacon if preferred)
- 1 small onion, diced
- 1 bell pepper, diced
- 1 cup cooked and crumbled beef sausage (or turkey sausage)
- 8 large eggs
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (cheddar or your favorite type)
- 4 cups cubed bread (preferably day-old)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the beef bacon over medium heat until crispy. Remove and set it on a paper towel to drain excess grease.
- In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened.
- Crumble the cooked beef sausage into the skillet and mix together. Cook for an additional 2 minutes until heated through.
- In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
- In a greased baking dish, layer the cubed bread, beef bacon, and the sausage mixture. Pour the egg mixture evenly over the top.
- Sprinkle the shredded cheese on top of the casserole.
- Bake in the preheated oven for 30-35 minutes or until the casserole is set and the top is golden.
- Let it cool for a few minutes before slicing and serving.
