Description
Festive christmas pinwheel cookies with vibrant red and green spirals and buttery sugar cookie flavor.
Ingredients
2/3 cup unsalted butter softened
2/3 cup sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cups all purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
Red gel food coloring
Green gel food coloring
Red sanding sugar
Instructions
1. Add the butter and sugar to a stand mixer and beat until creamy.
2. Add the egg and vanilla and blend.
3. Whisk flour, salt, and baking soda in a separate bowl then gradually add to the mixer.
4. Divide dough into three equal parts.
5. Color one part red, one part green, and leave one plain. Chill for one hour.
6. Roll each dough portion between parchment into a 7 inch square. Chill 15 minutes.
7. Stack dough layers and roll into a 12 by 8 inch rectangle. Roll into a log and freeze one hour.
8. Preheat oven to 350 degrees F. Slice log into 1/3 inch slices.
9. Coat edges in red sanding sugar and place on baking sheet.
10. Bake 8 to 10 minutes and cool on a rack.
Notes
Use gel food coloring for best color.
Chill between steps for clean spirals.
Freeze dough log up to three months.
