Description
Classic ginger cookies with warm spice, molasses sweetness, and soft centers.
Ingredients
3 and 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon ground ginger
1 tablespoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
10 tablespoons unsalted butter
3/4 cup brown sugar
2/3 cup molasses
1 large egg
1 teaspoon vanilla
Instructions
1. Whisk the dry ingredients.
2. Cream butter, sugar, and molasses.
3. Add egg and vanilla.
4. Combine wet and dry ingredients.
5. Chill dough for at least 3 hours.
6. Roll dough and cut shapes.
7. Bake at 350°F for 9 to 10 minutes.
8. Cool completely before decorating.
Notes
Dough freezes well for up to three months.
Use high quality molasses for best flavor.
