Description
Rich and tender coffee butter cookies with chocolate and pistachios.
Ingredients
1 tablespoon instant coffee
2 tablespoons hot water
1 cup icing sugar
1 stick unsalted butter
1 large egg
2 cups all purpose flour
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1 cup melted dark chocolate
1/4 cup chopped pistachios
Instructions
1. Dissolve instant coffee in hot water and cool.
2. Cream butter and icing sugar.
3. Add egg and mix.
4. Whisk dry ingredients.
5. Add coffee mixture and dry ingredients.
6. Pipe dough.
7. Freeze 5 to 10 minutes.
8. Bake at 350°F for 8 minutes.
9. Dip in chocolate and top with pistachios.
Notes
Optional: Use white chocolate or different nuts for topping.
