Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, roughly chopped
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional: Fresh herbs for garnish (like parsley or basil)

Instructions

  1. In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface. This usually takes about 2-3 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until translucent.
  3. Stir in the minced garlic and chopped spinach. Cook for another 2 minutes until the spinach wilts.
  4. Lower the heat, then add the crumbled feta cheese and heavy cream. Stir continuously for about 3-4 minutes until the sauce is slightly thickened and glossy.
  5. Add the cooked gnocchi to the skillet and gently toss until well coated. Season with salt and pepper to taste. Cook for an additional 2 minutes to heat through.
