- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups fresh spinach, roughly chopped
- 1 cup feta cheese, crumbled
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: Fresh herbs for garnish (like parsley or basil)
Instructions
- In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface. This usually takes about 2-3 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until translucent.
- Stir in the minced garlic and chopped spinach. Cook for another 2 minutes until the spinach wilts.
- Lower the heat, then add the crumbled feta cheese and heavy cream. Stir continuously for about 3-4 minutes until the sauce is slightly thickened and glossy.
- Add the cooked gnocchi to the skillet and gently toss until well coated. Season with salt and pepper to taste. Cook for an additional 2 minutes to heat through.
