Description

Creamy Spinach Puff Pastry Bites are flaky, golden, and filled with a rich spinach and cheese mixture. Perfect for brunch, game day, or anytime you need a quick, crowd-pleasing appetizer.


Ingredients

1 sheet puff pastry, thawed

2 cups fresh spinach, chopped (or ½ cup frozen, thawed & squeezed)

1 garlic clove, minced

¼ teaspoon sea salt

¼ teaspoon ground black pepper

½ cup ricotta cheese

¼ cup shredded mozzarella

1 egg, beaten


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. Sauté chopped spinach with garlic, salt, and pepper for 2 minutes, then let cool.

3. Roll out the puff pastry and cut into 10 equal pieces (circles or squares).

4. Place 1 tbsp ricotta in the center of each piece. Top with spinach and mozzarella.

5. Brush tops with beaten egg for golden color.

6. Bake for 18–20 minutes or until puffed and golden brown.

7. Let cool slightly and serve warm.

Notes

Keep puff pastry cold until ready to use for best flakiness.

Thoroughly squeeze moisture from spinach to avoid soggy pastry.
