- 1 cup diced onion
- 2 cups diced potatoes
- 1 cup chopped bell peppers

- 6 large eggs
- 1 cup milk

Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the diced beef sausage over medium heat until browned, about 5–7 minutes.
- Add diced onion and bell peppers to the skillet. Cook for another 3–5 minutes until the onions are translucent.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Layer the cooked beef mixture along with the diced potatoes in a greased baking dish.
- Pour the egg mixture evenly over the layered ingredients.
- Top with shredded cheese and any chopped herbs if desired.
- Bake in the preheated oven for 30–35 minutes, or until the eggs are set and the top is golden.
- Let cool for a few minutes before slicing and serving. Enjoy!
