Description

Ingredients

  • 1 lb beef sausage, diced
  • 1 cup diced onion
  • 2 cups diced potatoes
  • 1 cup chopped bell peppers
  • 1 cup shredded cheese (your choice)
  • 6 large eggs
  • 1 cup milk
  • Salt and pepper to taste
  • Optional: Chopped herbs for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the diced beef sausage over medium heat until browned, about 5–7 minutes.
  3. Add diced onion and bell peppers to the skillet. Cook for another 3–5 minutes until the onions are translucent.
  4. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. Layer the cooked beef mixture along with the diced potatoes in a greased baking dish.
  6. Pour the egg mixture evenly over the layered ingredients.
  7. Top with shredded cheese and any chopped herbs if desired.
  8. Bake in the preheated oven for 30–35 minutes, or until the eggs are set and the top is golden.
  9. Let cool for a few minutes before slicing and serving. Enjoy!
