- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 large onion, sliced
- 2 cloves garlic, minced
- 2 cups cooked chicken, shredded or diced
- 1 cup beef broth
- 1 cup heavy cream
- 1 teaspoon thyme
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheese (Gruyère or Swiss recommended)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a pot of boiling salted water, cook the orzo according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add olive oil. Once hot, add diced onion and sauté until soft and translucent (about 5 minutes).
- Add minced garlic and cook for another 2 minutes until fragrant.
- Stir in the cooked chicken, beef broth, heavy cream, thyme, onion powder, salt, and pepper. Simmer gently for about 5 minutes until slightly thickened.
- Add the cooked orzo and stir until combined; the sauce should be slightly thick and glossy.
- Pour the mixture into a baking dish and top with shredded cheese.
- Bake for 15 minutes until the cheese is melted and bubbly.
- Remove from oven, garnish with fresh parsley if desired, and serve.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. This casserole can also be frozen and reheated.
