Description

A comforting and savory casserole featuring chicken, orzo, and caramelized onions, perfect for family dinners or entertaining.


Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded or diced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (Gruyère or Swiss recommended)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a pot of boiling salted water, cook the orzo according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, add olive oil. Once hot, add diced onion and sauté until soft and translucent (about 5 minutes).
  4. Add minced garlic and cook for another 2 minutes until fragrant.
  5. Stir in the cooked chicken, beef broth, heavy cream, thyme, onion powder, salt, and pepper. Simmer gently for about 5 minutes until slightly thickened.
  6. Add the cooked orzo and stir until combined; the sauce should be slightly thick and glossy.
  7. Pour the mixture into a baking dish and top with shredded cheese.
  8. Bake for 15 minutes until the cheese is melted and bubbly.
  9. Remove from oven, garnish with fresh parsley if desired, and serve.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. This casserole can also be frozen and reheated.
