Ingredients
1 tablespoon unflavored gelatin (grass-fed preferred)
1 cup water or unsweetened almond milk
1–2 teaspoons lemon juice or apple cider vinegar
1–2 teaspoons raw honey or monk fruit sweetener (optional)
Pinch of pink Himalayan salt
Optional: 1 scoop collagen peptides or protein powder
Optional: grated ginger or turmeric
Optional: dash of cinnamon or cayenne
Optional: citrus zest or pure vanilla extract
Instructions
1. Bloom the gelatin by combining it with 1/4 cup cold water or almond milk in a small saucepan. Let sit for 5 minutes.
2. Gently warm the bloomed gelatin over low heat, stirring constantly until dissolved. Do not boil.
3. Add lemon juice or apple cider vinegar, sweetener if using, and a pinch of pink Himalayan salt.
4. Add any optional flavorings like ginger, collagen, or spices. Stir until fully dissolved and smooth.
5. Pour mixture into ramekins, jars, or silicone molds.
6. Refrigerate for at least 3 hours until firm.
7. Serve chilled. Optionally garnish with zest, mint, or a few berries.
Notes
Start with ½ to 1 cup as a light snack. For a more filling version, add collagen or Greek yogurt.
