Description
Deliciously thick gingerbread NYC cookies packed with white chocolate chips and warm winter spices.
Ingredients
125 g unsalted butter
175 g dark brown soft sugar
1 medium egg
1 teaspoon vanilla
280 g plain flour
1.5 teaspoons ground ginger
0.5 teaspoon cinnamon
0.5 teaspoon nutmeg
1.5 teaspoons baking powder
0.5 teaspoon bicarbonate of soda
0.5 teaspoon sea salt
300 g white chocolate chips
Instructions
1. Cream the butter and sugar.
2. Add egg and vanilla.
3. Mix in flour and spices.
4. Add white chocolate chips.
5. Form into 120 g dough balls.
6. Chill dough.
7. Bake 12 to 14 minutes.
8. Cool completely.
Notes
Cookies stay fresh 4 to 5 days.
Freeze dough and bake from frozen.
Add cornflour for softer cookies.
Make smaller cookies by baking 60 g dough balls for nine minutes.
