Description
Healthy almond joys are just as delicious as the classic candy while being vegan, gluten free, and refined sugar free. These low sugar, no bake treats come together in minutes!
Ingredients
Base
3 cups unsweetened finely shredded coconut
1/4 cup maple syrup or honey
3 tbsp melted coconut oil
1 tsp vanilla extract (optional but recommended)
Pinch of sea salt (optional but recommended)
Chocolate topping
1 cup chocolate chips or chopped bars
2 tsp coconut oil
Raw almonds
Instructions
1. Make the coconut base: In a food processor, combine coconut, oil, syrup, vanilla, and salt. Process for 40 seconds until sticky but not oily.
2. Divide and press the mixture firmly into mini muffin tins.
3. Melt chocolate and coconut oil in the microwave or double boiler until smooth.
4. Spoon chocolate on top of each bite and add an almond to the center.
5. Freeze for 3–4 hours until solid. Store in freezer or fridge.
Notes
Store in an airtight container in the freezer for up to 2 months or in the fridge for 2–3 weeks.
To make them nut-free, omit the almonds and enjoy as healthy mounds bars.
Use white, dark, or milk chocolate based on preference.
