Description

Warm, comforting, and nourishing, this Healthy Breakfast Apple Crumble is your perfect start to the day. With baked apples, oats, and a crisp topping, it’s a delicious and wholesome morning treat.

Ingredients

Scale

4 medium apples, peeled, cored, and sliced

1 tablespoon lemon juice

1 teaspoon ground cinnamon

3 tablespoons honey or maple syrup

1 cup rolled oats

½ cup almond flour

1/2 cup beef bacon (or turkey bacon), chopped

1 teaspoon vanilla extract

1/4 cup melted coconut oil

1/4 cup chopped nuts (e.g., walnuts or almonds)

Pinch of salt

Instructions

1. Preheat the oven to 350°F (175°C).

2. In a mixing bowl, toss the sliced apples with lemon juice and cinnamon. Add honey or maple syrup and mix until well combined.

3. In another bowl, mix rolled oats, almond flour, and a pinch of salt.

4. Add in chopped beef bacon (or turkey bacon) and nuts, then pour in melted coconut oil and vanilla extract. Mix until crumbly.

5. Spread the apple mixture evenly in a baking dish, then sprinkle the crumble topping over the apples.

6. Bake in the preheated oven for 25-30 minutes, or until the apples are soft and the topping is golden brown.

7. Allow to cool slightly before serving. Enjoy warm or at room temperature!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.

For a nut-free version, substitute nuts with sunflower or pumpkin seeds.

Assemble fresh before baking if prepping ahead.

Delicious with a spoonful of yogurt or a scoop of ice cream.
