Description
Honey Roasted Carrots recipe made with whole carrots, honey, olive oil, salt, and pepper roasted until tender and caramelized.
Ingredients
1 pound small carrots peeled and trimmed
2 tablespoons olive oil
2 tablespoons honey
Salt and pepper to taste
Cooking spray
Optional garnish: chopped parsley
Instructions
1. Preheat the oven to 400 degrees. Line a sheet pan with foil and spray with cooking spray.
2. Place the carrots in a single layer on the pan.
3. Mix olive oil, honey, salt, and pepper then pour over carrots. Toss to coat.
4. Roast 25 to 35 minutes until tender and browned.
5. Sprinkle with parsley and serve immediately.
Notes
Choose small whole carrots for best flavor.
