Description
No Bake Sweet Potato Cheesecake Bars with a graham cracker crust, silky cheesecake middle, and spiced sweet potato topping. No oven needed!
Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup dark brown sugar
6 tbsp melted butter
16 oz cream cheese (softened)
1/2 cup granulated sugar
1 tsp vanilla extract
8 oz Cool Whip or 1/2 cup whipped cream
1 large sweet potato (or 1 cup puree)
1/2 tsp cinnamon
1/4 tsp nutmeg
Instructions
1. Boil or bake the sweet potato, mash, and let it cool.
2. Crush graham crackers and mix with butter and brown sugar to form crust.
3. Press crust into a parchment-lined 8×8 or 9×9 dish.
4. Beat cream cheese, sugar, and vanilla until smooth.
5. Fold in Cool Whip and spread over the crust.
6. Mix mashed sweet potato with cream cheese, spices, and vanilla.
7. Spread sweet potato mixture over cheesecake layer.
8. Cover and refrigerate for 8 hours or overnight.
9. Slice into bars and serve chilled.
Notes
Use parchment paper for easy lifting and clean slicing.
For vegan option, use dairy-free cream cheese and whipped topping.
Can be frozen for up to one month in airtight container.
