- 2 cups pancake mix
- 2 cups milk
- 4 large eggs
- 1 tsp vanilla extract
- 1/4 cup maple syrup (plus extra for serving)
- 1/2 cup shredded cheddar cheese (optional)
- Powdered sugar for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a skillet over medium heat, cook the breakfast sausage until browned and cooked through, breaking it up into small pieces. Drain the excess fat and set aside.
- In a large bowl, whisk together the pancake mix, milk, eggs, vanilla extract, and maple syrup until well blended. The batter should be smooth with no lumps.
- Scrape the cooked sausage into the pancake batter, stirring to distribute evenly. If desired, add the shredded cheddar cheese and mix gently.
- Pour the combined mixture into the greased baking dish, spreading it evenly.
- Bake in the preheated oven for 25 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the casserole to cool for a few minutes before slicing. Dust with powdered sugar, if desired, and serve warm with extra maple syrup on the side.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave before serving. Substitute the breakfast sausage with bacon or turkey sausage for a different flavor profile. This casserole can be prepared a day in advance.
