- 8 large eggs
- ½ cup milk
- 1 cup shredded mozzarella cheese
- 1 cup diced bell peppers
- ½ cup diced onions
- 1 cup diced tomatoes
- 1 tablespoon Italian seasoning
- Salt and pepper, to taste
- 4 strips of beef bacon or turkey bacon, cooked and crumbled
- Fresh basil leaves, for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together eggs, milk, Italian seasoning, salt, and pepper until well combined.
- In a large skillet, sauté the diced onions and bell peppers over medium heat for about 3-4 minutes, until they start to soften.
- Stir in the diced tomatoes and cook for an additional 2 minutes.
- Pour the egg mixture into the skillet with the sautéed vegetables, and gently mix in the shredded mozzarella cheese and crumbled beef bacon.
- Cook on medium-low heat for about 5 minutes, stirring occasionally until the edges begin to set.
- Once the edges are set, transfer the whole skillet to the preheated oven, and bake for an additional 10 minutes, or until the center is fully set and the cheese is bubbly.
- Remove from the oven, garnish with fresh basil leaves if desired, and serve immediately.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave before serving.
