Description

Indulge in a deliciously comforting breakfast with this Blueberry French Toast Casserole! Perfect for brunch gatherings or a cozy family breakfast, this dish combines the delightful flavors of fresh blueberries, fluffy bread, and creamy custard.


Ingredients

  • 8 slices of brioche or challah bread, cubed
  • 2 cups fresh blueberries (or frozen, if unavailable)
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • Butter (for greasing the baking dish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with butter.
  3. Place half of the cubed brioche in the greased baking dish. Sprinkle half of the blueberries on top of the bread, then add the remaining cubes of bread followed by the rest of the blueberries.
  4. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, ground cinnamon, and salt until well combined.
  5. Pour the custard mixture evenly over the layered bread and blueberries. Gently press the bread down with a fork to ensure it soaks up the mixture completely.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Let the casserole cool for a few minutes before slicing. Serve warm, perhaps with a drizzle of maple syrup or a dusting of powdered sugar.

Notes

Refrigerate any leftovers in an airtight container for up to 3 days. You can substitute blueberries with strawberries or raspberries for a fruity twist.
