Description

Rice crispy ice cream sandwiches are the ultimate no-bake frozen summer treat. Sweet, chewy, creamy, and so easy to make.


Ingredients

Scale

4 tablespoons unsalted butter (about 2 oz or 55 g)

1 package mini marshmallows (10 oz or 180 g)

6 ½ cups crispy rice cereal

1 teaspoon vanilla extract

Your favorite ice cream


Instructions

1. Place mini marshmallows and sliced butter in a large microwave-safe bowl.

2. Microwave in 30-second intervals, stirring each time, until fully melted and smooth.

3. Stir in vanilla extract, then add crispy rice cereal.

4. Mix until the cereal is fully coated.

5. Press mixture into a parchment-lined pan and flatten evenly.

6. Let cool completely, then cut out round or shaped pieces using cookie cutters.

7. Soften ice cream slightly, scoop or slice onto one crispy piece, then top with a second piece.

8. Gently press to create a sandwich.

9. Freeze assembled sandwiches for 1 hour before serving.

Notes

You can customize your sandwiches by adding sprinkles, dipping in chocolate, or using flavored cereals.

Make ahead and freeze for up to 2 weeks.

Let sit at room temperature for 2–3 minutes before serving for best texture.
