Description
Rice Krispie Ice Cream Sandwiches are chewy, creamy frozen treats made with buttery marshmallow cereal layers and a vanilla ice cream center. No baking needed.
Ingredients
Cooking spray
10 tablespoons unsalted butter, divided
16 cups miniature marshmallows, divided
12 cups Rice Krispies cereal, divided
1/2 teaspoon salt, divided
1 gallon vanilla bean ice cream
Instructions
1. Line two 9×13 inch pans with parchment paper. Spray lightly with cooking spray.
2. Melt 5 tablespoons of butter in a large pot over medium-low heat. Add 8 cups marshmallows and stir until just melted.
3. Remove from heat, stir in 1/4 teaspoon salt and 6 cups cereal. Mix well.
4. Press mixture into one prepared pan using greased hands.
5. Repeat with remaining ingredients in second pan. Let cool for 30 minutes.
6. Spread a 1-inch layer of softened ice cream over one layer.
7. Flip second layer on top, press gently to seal. Remove parchment.
8. Cover and freeze for 4–8 hours until solid.
9. Slice into bars using a sharp knife warmed in hot water.
10. Let sit at room temperature for 5 minutes before serving. Wrap leftovers and freeze.
Notes
Use fresh marshmallows for soft texture.
Avoid overheating the marshmallows.
Store individually wrapped sandwiches in the freezer up to one week.
