Description
Roasted carrots with honey mustard glaze made with fresh carrots, rosemary, garlic, honey, and Dijon.
Ingredients
12 to 15 medium carrots, rainbow or orange
2 tablespoons olive oil
2 tablespoons honey
1 tablespoon Dijon mustard
1 tablespoon fresh rosemary, finely chopped
2 cloves garlic, minced
½ teaspoon sea salt
½ teaspoon black pepper
2 tablespoons parsley, chopped for garnish
Instructions
1. Mix glaze ingredients until smooth
2. Scrub, peel, and slice carrots into uniform sizes
3. Toss carrots with glaze
4. Arrange carrots on parchment lined baking sheet
5. Roast at 425 F for 20 to 25 minutes until caramelized
6. Finish with remaining glaze and garnish with parsley
Notes
Use similar sized carrots for even roasting
Do not overcrowd the baking sheet
Add apple cider vinegar to glaze for a tangier variation
