Description
Scalloped potatoes with caramelized onions and Gruyere baked until tender and golden.
Ingredients
2 tablespoons extra virgin olive oil
4 cups sliced onions
6 Yukon gold potatoes, 1/8 inch slices
3/4 cup grated Gruyere cheese
1/2 cup grated Parmesan cheese
1 teaspoon kosher salt
1/2 teaspoon white pepper
1 teaspoon butter
1/3 cup stock
1 teaspoon minced rosemary
Instructions
1. Preheat oven to 400F.
2. Caramelize onions in olive oil until golden.
3. Toss sliced potatoes with oil, cheese, salt, and pepper.
4. Layer onions then potatoes in buttered dish. Add stock and cheese.
5. Cover with foil and bake 50 minutes.
6. Remove foil, broil 5 minutes, sprinkle rosemary.
Notes
Use Yukon gold potatoes for best texture.
Caramelized onions can be prepared 2 days ahead.
Fully baked casserole reheats well for holidays.
