Description
Warm, cheesy, and bursting with flavor, these Spinach Ricotta Stuffed Shells are the perfect comfort food for weeknights or gatherings. Easy to prep and absolutely crowd-pleasing.
Ingredients
12 large pasta shells
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
2 cups fresh spinach, chopped
1 cup ricotta cheese
1 cup shredded mozzarella cheese, divided
½ cup grated Parmesan cheese
1 teaspoon dried oregano
1 teaspoon salt
¼ teaspoon black pepper
3 cups marinara sauce
1 pound chicken strips or turkey bacon (optional)
Instructions
1. Preheat the oven to 375°F (190°C).
2. Cook pasta shells according to package directions until al dente. Drain and cool.
3. Heat olive oil in skillet, add onion and sauté 2-3 minutes.
4. Add garlic and cook 1 minute.
5. Add spinach and cook until wilted, about 2 minutes.
6. Combine spinach, ricotta, half mozzarella, Parmesan, oregano, salt, and pepper in a bowl.
7. Stuff shells with mixture.
8. Spread marinara in a baking dish. Place stuffed shells on top.
9. Top with more marinara and remaining mozzarella.
10. Add meat on top if using.
11. Cover with foil and bake 20 minutes.
12. Remove foil, bake 10 more minutes until bubbly.
13. Cool slightly before serving.

You can prep this dish up to 24 hours in advance.
Freezable up to 2 months.
